Walnut, Apple & Kale Salad with Peanut Butter Dressing
This salad is crunchy, sweet, and hearty, with a creamy peanut butter, garlic & flaxseed dressing that will make you scream.
It's so tasty, you'll want to eat it again tomorrow. Because it has so few ingredients, it'll have you feeling light and energised.
It’s perfect as a light lunch, a side dish, or a refreshing snack.
Ingredients (Serves 1)
Salad

3 handfuls of kale, washed and roughly chopped

1 apple, sliced into small pieces

½ cup walnuts, roughly chopped
Dressing

2 tbsp peanut butter
-
1 tsp garlic powder (or 2 small fresh garlic cloves, finely chopped)

1 tbsp ground flaxseed
-
2 tbsp lemon juice (adjust to taste)
-
½ tsp black pepper
-
½ tsp sea salt (adjust to taste)

Optional: 1–2 tbsp water to thin the dressing if needed
Directions

Prepare the Salad

Wash and chop the kale.

Cut the apple into smaller pieces and roughly chop/crush the walnuts.

Place everything in a large bowl.

Make the Dressing

In a small bowl, mix peanut butter, garlic, ground flaxseed, lemon juice, black pepper, and salt.

Add a little water if needed to reach your desired consistency.

Assemble the Salad

Layer the kale, then apple, then walnuts.

Pour the dressing over the kale, apple, and walnuts.

Toss well until all ingredients are coated evenly.
